Default Bacon wrapped chicken skewers

Since Randy posted his recipe I figure I'll post mine. These were the bacon wrapped chicken we made at the Tie-up on Tuesday out near the big part of the lake. There were a few folks that got to have some.

-Boneless, skinless chicken breasts (cut into 1 X 1 chunks)

-Bacon (we prefer the "hotel brand)

-Can of sliced jalapeno peppers (you decide how hot or mild)

-Mcormicks chicken seasoning

-Wooden skewer sticks soaked in water for about 30 minutes

Lay out a strip of bacon. Take a chunk of chicken and lay it on the bacon and then add a jalapeno pepper slice on top. Roll the bacon over the chicken until it is slightly overlapped and cut the bacon. You should have a chunk of chicken and pepper wrapped nicely in a little piece of bacon. Put in on your skewer. Repeat until your desired amount of skewers are filled up.

Season with MCormicks chicken seasoning. Spray a gas grill with some non-stick spray and slap them bad boys on there. Cook till they are done. Be careful because the bacon will start flaring the grill up and if you are cooking on the boat have some water ready to douse the flames. The bacon will get pretty black but the chicken will remain nice and juicy.

We do the same thing with chicken, except we use green peppers instead of jalapenos.

And the grill will flare like a $%@#!
